COUNTDOWN TO THE HOLIDAYS!

It'll be here before we know it. The Santa Claus Parade has made it's way through the streets of downtown Toronto, holiday music is playing in every store and twinkly lights have already been turned on. Yes, girls and boys, it'll soon be time to open presents and sing our favourite carols.

And with the festive season quickly approaching, it's time to talk about sugar and spice and all things warm, cozy and nice. I love a mug of hot chocolate on a chilly day. Here are a couple of recipes. ENJOY!


Rich Hot Chocolate

Servings: 4

6 oz (175 g) semisweet chocolate, finely chopped
1/2 cup 125 mL) water
3 cups (750 mL) milk

In heatproof bowl over saucepan of hot not boiling water, melt chocolate with water until smooth. Meanwhile, in saucepan, heat milk until steaming and small bubbles appear around edge. Using immersion blender or whisk, blend in chocolate. Pour into mugs. Garnish with whipped cream and chocolate shavings.

Peppermint Hot Chocolate

Servings: 4

2 cups (500 mL) milk
1 tbsp (15 mL) granulated_sugar
2 oz (60 g) bittersweet chocolate, finely chopped
1-1/2 oz (45 g) milk chocolate, finely chopped
1/4 tsp (1 mL) peppermint extract

In saucepan, bring milk, sugar and 1 cup (250 mL) water to boil over medium heat. Remove from heat. Whisk in bittersweet and milk chocolates until melted. Stir in peppermint extract. Garnish with whipped cream and candy-canes.
